Get a behind-the-scenes tour of the Trust’s Shellfisher Preserve which houses a shellfish hatchery, and leave with a better understanding of the local shellfish farming industry. Preserve Manager Marty Byrnes will lead us through the hatchery where shellfish are spawned and spat (baby shellfish) are produced, to the nursery where spat are grown to planting size and discuss the final steps of bringing the shellfish to market. You’ll enjoy a taste of fresh-from-the-water Peconic Pearl oysters and clams with local wine following the tour.
