Recipe from the Gardens: Persillade

At its simplest, persillade is a mixture of chopped parsley, garlic, olive oil, and salt, but there are many variations of this French sauce for grilled meats, chicken, pasta potatoes, or just about anything.
Ingredients
1 cup chopped flat-leaved parsley
2 scallions, finely chopped
6 Tbs. chopped cornichons
1 tsp. cornichon brine
3 tbs. chopped capers
3-4 cloves garlic, finely chopped
1 tsp. sugar
Salt and pepper
½ cup extra virgin olive oil
Directions
Mix the first 8 ingredients and then add the olive oil. Use right away or keep in the fridge for up to a week.
Note: If you add lemon zest to the basic persillade recipe, you get gremolata, another versatile and tasty sauce.
